How does seasonality influence a hospitality energy contract?

High season, low season, annual closure, summer terrace: a hospitality business's volumes vary sharply from one month to the next. A contract frozen on a theoretical volume exposes you to overshoot or under-consumption clauses; a contract set to your actual seasonality avoids them.

Because a hospitality business consumes against the flow of office hours: service happens in the evening and at weekends, while refrigeration (cold rooms, fridges, cellars) runs without interruption.
